Yes, one can easily cover 10 Hz in QRSS-120.
I do not believe that setting a grabber to QRSS120 is useful.
Why do you think that? If someone transmits a short character like "A" by RN3AGC, it would take 4 minutes. Do you think the propagation does change so rapidly? And if a QRSS-120 grabber is not useful, why do you transmit "X" in QRSS-120 and not in QRSS-60?
